Stuffed Pepper Soup
Ingredients:
1 onion, diced
• 2 bell peppers (any color), diced
4 garlic cloves, minced
• 1 pound lean ground beef
• 1 tablespoon olive oil
1/2 teaspoon dried basil
1 /2 teaspoon dried oregano
• 1/2 teaspoon dried thyme
• 2 cans (14.5 ounces each) fire roasted tomatoes (or plain diced tomatoes)
• 1 can (15 ounces) tomato sauce
• 2 cups low-sodium beef broth
• 2 cups cooked rice
Salt and pepper to taste
• Fresh parsley. chopped, for gamish
• Fresh Parmesan cheese, grated, for garnish (optional)
Instructions:
1. Prepare the Vegetables: Dice YO’Jr onion and bell peppers. Mince the garlic cloves and set all aside

2. Brown the Ground Beef: In a large soup pot over medium heat, cock the ground beef until browned.

minutes or until slightly softened. Add garlic, dried basil, dried oregano, and dried thyme. Stir for 30
seconds.
